Our lamb is primarily a cross between Beltex and Texel or Charollais breeds, and it matures longer than the typical supermarket lamb, which is usually finished at 5-6 months. Our lambs are around 10 months old, which results in larger joints and chops, offering a richer, more developed flavour.
